• 1 cup grated zucchini
  • 1 large egg, beaten
  • ¼ cup seasoned breadcrumbs
  • ¼ cup 2% shredded cheddar cheese
  • ¼ medium onion, finely diced
  • ¼ tsp black pepper


Pre-heat oven to 400 degrees. Line baking sheet with foil and grease with oil spray. Place grated zucchini in a dish towel and wring out over the sink, removing excess liquid. Place all ingredients in a medium size bowl with the zucchini and combine well. Spoon mixture on greased baking sheet using a small #40 scoop (about 1.5 tablespoon measure). Bake about 15-18 minutes or until lightly golden brown. Makes 15 “tots”.
