• 32 oz plain non-fat Greek yogurt
  • ½ tsp salt


Line a colander or sieve with 4 layers of cheesecloth (or a coffee filter) and place over a bowl.
Pour in non-fat Greek yogurt, mix in salt, and cover with plastic wrap.
Allow to drain for 12+ hours or overnight. The yogurt should have a cream cheese like texture.
Roll in wax paper and refrigerate to further firm “cheese.”
Top with fresh herbs and enjoy on raw veggies OR seedy crackers (see recipe).
