Garlic Baked Tilapia in Foil with Asparagus and Tomatoes
Ingredients
- 4x 3-4 oz. tilapia filets
- 1/2 tsp salt
- 1 tsp black pepper
- 8 garlic cloves, minced
- 4 tsp margarine
- 8 slices of lemon (approx. 1 large lemon)
- 1 pound thin asparagus stalks cut into thirds
- 24 cherry tomatoes (~12 oz.) halved
Directions
Preheat the oven to 400F or preheat grill to medium. Place each tilapia filet on a piece of tinfoil large enough to fold and enclose tightly. Season each filet with salt and pepper. Divide remaining ingredients by four. Top tilapia filet with garlic, then margarine and lemon slices. Add asparagus and tomatoes to packet, then seal tightly (folding in ends and then rolling sides together). Place packets directly on grill OR on a baking sheet in the oven. Bake 20-25 minutes or until tilapia is cooked through and flakes easily with a fork (Grill temperatures may vary). Serve in foil packets or remove and place on serving plates. Serve immediately.
Variations: Consider serving with a basil pesto sauce OR before baking, make a lemon pepper rub using Mrs. Dash lemon pepper and 1 tsp olive oil
