• 3 Tbsp powdered peanut butter mixed with 1.5 Tbsp water
  • 8oz 1/3 less fat Cream Cheese (also called Neufchatel cheese), room temperature
  • 2 ½ Tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 ½ cups Splenda or granulated Stevia
  • ½ cup mini chocolate chips


In a deep bowl, mix together peanut butter with cream cheese. Stir in cocoa powder and vanilla.
Gradually add in the Splenda and stir until well blended and creamy.
Line a small bowl with plastic wrap and spoon the mixture into the bowl, covering with the edges of the plastic wrap. Freeze for 6 hours or until firm.
Remove from plastic wrap and cover the cream cheese mixture with mini chocolate chips. Serve with sliced apple.

Makes one cheese ball, about 20 servings
