Overnight Chocolate Chia Pudding
- 1 1/2 cups unsweetened almond milk
- 1/3 cup chia seeds
- 1/4 cup unsweetened cocoa powder
- 2 Tbsp maple syrup if not blending
- 1/2 tsp ground cinnamon
- 1/8 tsp sea salt
- 1/2 tsp vanilla extract
Add all ingredients except sweetener to a mixing bowl and whisk vigorously to combine. Add maple syrup last and mix well. Let rest covered in the fridge overnight or for at least 3-5 hours (or until it’s achieved a pudding-like consistency).
Serve chilled. Keep leftovers covered in the fridge for 2-3 days.
Optional: try blending, if you prefer a more smooth and creamy pudding
