Ingredients

  • 2 tbsp olive oil mayonnaise
  • 1/3 cup plain Greek yogurt
  • 1 tsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ½ tbsp curry powder
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ¼ cup chopped cilantro
  • 2 green onions, chopped
  • 1 orange bell pepper, chopped
  • 14 oz. extra firm tofu

Directions

Remove tofu from packaging and allow it to drain in colander as you prepare dressing. In a medium bowl, stir together the mayonnaise, yogurt, lemon juice, Dijon mustard, honey, curry powder, salt, garlic powder, chopped cilantro and chopped pepper. Crumble the drained tofu into the bowl with the dressing and stir to combine. Serve immediately or refrigerate until you are ready to eat. Serve over a bed of lettuce, in a lettuce wrap, or with Wasa crackers.
**Not a cilantro fan? Use more chopped green onions instead of cilantro.
**Feel free to add other vegetables like chopped celery, finely diced red onion, shredded carrots, etc.
