• 3/4 cup fat free Greek yogurt
  • 2 Tbsp freshly squeezed lemon juice (juice of 1 lemon)
  • 3 cloves garlic, minced
  • 1 medium cucumber, chopped
  • 4 cups shredded rotisserie chicken, skin removed OR shredded chicken breast and thighs
  • 6 cherry tomatoes, quartered
  • 1/2 medium onion, chopped
  • 3 oz feta cheese, crumbled
  • 1/4 cup kalamata olives, chopped
  • 2 Tbsp fresh dill, chopped
  • 2 Tbsp parsley, chopped
  • 1/8 tsp salt
  • *Optional: 10 60-calorie pitas (Joseph’s brand)


In a large bowl, combine all of the ingredients and mix well. Chill until ready to serve, at least 30 minutes. Serve on pita bread, on top of lettuce, or by itself.

Serving Size: ½ cup of mixture, ~3 oz chicken
