Carrot Ginger Sesame Salad Dressing

Ingredients
- 1 tsp fresh orange zest
- Juice of one large orange (about ¼ cup)
- 1 small carrot, peeled and finely grated
- 2 tsp freshly grated ginger – or from a tube
- 2 scallions, minced
- 1 Tbsp low sodium soy sauce
- 1 tsp Truvia/stevia
- 2 Tbsp sesame oil
Directions
Mix all ingredients together in a bowl with a whisk. Store in refrigerator in a mason jar or airtight container and shake before use.
Serving Size: 2 Tbsp
Makes 4 servings, about ½ cup of dressing
