Carrot Ginger Sesame Salad Dressing

1 tsp fresh orange zest
Juice of one large orange (about ¼ cup)
1 small carrot, peeled and finely grated
2 tsp freshly grated ginger – or from a tube
2 scallions, minced
1 Tbsp low sodium soy sauce
1 tsp Truvia/stevia
2 Tbsp sesame oil

Mix all ingredients together in a bowl with a whisk. Store in refrigerator in a mason jar or airtight container and shake before use.

Serving Size: 2 Tbsp
Makes 4 servings, about ½ cup of dressing
