• 1 cup chopped red, yellow, and green bell peppers
  • 8 large eggs
  • ½ cup nonfat plain Greek yogurt
  • ¼ cup whole wheat flour
  • 1 tsp dried thyme
  • 4oz fat free feta crumbles
  • Dash salt
  • Dash black pepper


Preheat the oven to 325 degrees. Chop peppers and place in medium bowl; add eggs and whisk until incorporated. Add in yogurt, flour, thyme, feta, salt and pepper, and whisk again. Spray 8×8 baking pan with nonstick spray and pour mixture into the pan. Bake for 20-25 minutes or until eggs are cooked and center is set.
Allow to cool before serving.
