Spiced Asian Pears with Yogurt
Ingredients
- Cooking oil Spray
- 1 medium Bosc pear
- 1 tsp Chinese 5 Spice Powder (or 5 pieces star anise)
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 Tbsp Trans-fat free light margarine
- Juice of 1 lemon, or 2 Tbsp bottled lemon juice
- 4 packets of sugar alternative (about 2.5 tbsp)
- 2 cups Oikos Triple Zero
Directions
Preheat oven to 325°F and lightly coat an 8-inch glass baking dish with cooking spray.
Wash and dry pear. Cut in half lengthwise and remove core and seeds using a spoon.
Immediately squeeze half the lemon juice over the pears to prevent browning.
In a small non-stick pan, heat margarine, sugar alternative, Chinese 5 Spice, vanilla, cinnamon, and the remaining lemon juice over medium heat until aromatic and bubbly, stirring frequently.
Place the pear halves cut side up in the prepared baking dish. Pour the melted margarine mixture over the pears and sprinkle with extra ground cinnamon (optional).
Bake pears for about 30-40 minutes or until fork tender and slightly caramelized. Let cool.
Once cooled roughly chop pears and serve over ½ cup yogurt.
Serving Size: ½ cup Greek yogurt topped with ¼ pear
