Ingredients

  • 1, 20oz package of 99% lean ground turkey
  • 1/4c parmesan cheese
  • 1 egg, beaten
  • 1/4c old fashioned oatmeal, pulsed 4x in food processor or spice grinder
  • 1/2c fresh chopped parsley, divided
  • 1 28oz can + 1 15can no salt added (or low sodium) crushed tomatoes
  • 1 medium onion, chopped
  • 6 cloves minced garlic
  • 1tsp kosher salt, divided
  • 1/2tsp black pepper
  • 1tsp olive oil
  • 2tsp basil, dried
  • 1/4tsp red pepper flakes (optional)

Directions

In medium size mixing bowl, add in ground turkey, egg, oats, parmesan cheese, 1/4c chopped parsley, 3/4tsp salt & pepper.
To slow cooker add in crushed tomatoes, red pepper flakes, basil, 1/4tsp salt and olive oil.
Sauté chopped onion in non-stick pan with oil spray on medium heat.
When onion is translucent, add in chopped garlic and sauté for 1-2 minutes being careful not to burn garlic.
Once it is cooked, allow to cool for moment and then add half of onions/garlic mixture to turkey meat and half to tomato sauce in slow cooker.
Combine all ingredients with ground turkey, roll to form 24 meatballs (about 2T mixture per meatball) and then drop into sauce in slow cooker.
Top with remaining 1/4c chopped parsley. Set on low and cook for 5-6 hours.

Serving options: a) zucchini spaghetti; b) fat free ricotta cheese; c) tofu noodles.
