Low fat Balsamic Vinaigrette

8 servings (~2 TB)

1 TB Shallot- minced
¼ cup Olive Oil
¼ cup of water
2 tsp Honey
1 tsp Dijon Mustard
4 TB Balsamic Vinegar
Salt & Pepper to taste
1TB Chopped Parsley

1. Combine all ingredients in a blender except olive oil. Turn the blender on low speed, and slowly add olive oil until the dressing has become emulsified.
