• 12 oz bagged fresh broccoli (in microwave safe bag)
  • ½ onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup panko breadcrumbs
  • 2 eggs, lightly beaten
  • ½ cup reduced fat shredded cheddar cheese
  • 1/3 cup grated parmesan cheese
  • ½ Tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Olive oil spray


Preheat oven to 400 degrees F. Prepare a large baking sheet by lightly spraying with olive oil spray. Cook bagged broccoli in microwave according to directions on the package. Set aside to cool. Heat oil in a small skillet. Add chopped onion and minced garlic, and sauté until soft. Meanwhile, empty bag of cooked broccoli onto a cutting board and chop into bite sized pieces. Transfer broccoli to a large bowl. To the same bowl, add breadcrumbs, lightly beaten eggs, parmesan cheese, cheddar cheese, onion, garlic, salt, pepper, onion powder, and garlic powder. Mix until combined. Form the mixture into 8 patties and place onto prepared baking sheet. Bake in preheated oven for 15 minutes. Flip patties, and bake for another 10 minutes until golden brown.
