Ingredients

  • 2 oz. low fat mozzarella cheese, shredded
  • ¼ cup thinly sliced fresh basil
  • 10 cherry tomatoes, halved
  • 2 tsp balsamic vinegar
  • ½ tsp salt, divided
  • ½ tsp ground black pepper, divided
  • 1 medium zucchini
  • 1 medium yellow summer squash
  • Olive oil spray
  • ¼ tsp Italian seasoning
  • 2 (3-4 oz.) chicken breasts
  • Optional: Extra balsamic vinegar for serving

Directions

Preheat oven to 400oF. In a small bowl, add mozzarella, sliced basil, halved tomatoes, balsamic vinegar, ¼ tsp salt and ¼ tsp pepper. Gently mix to combine and set aside. Cut the ends off the zucchini. Cut it in half lengthwise, then cut it into ½ inch slices (Making half-moon shape). Repeat with yellow squash.
Tear off two long pieces of aluminum foil. Divide the zucchini and yellow squash evenly between the two pieces of foil, placing in the center of each of the sheets of foil. Spray the squash with cooking spray and sprinkle with Italian seasoning and remaining salt and pepper. Place one piece of chicken breast on a cutting board and cover with plastic wrap. Use a mallet to pound the chicken thin and flat (about ½ inch thick). Repeat with other chicken breast. Place half the tomato mixture on each chicken breast-about 1 inch away from one edge of the chicken. Roll the chicken around the tomato mixture and use 2-3 toothpicks to secure the seam. Place stuffed chicken breasts on top of squash piles. Bring the longest ends of the foil up over the chicken and roll them together. Then roll the short ends in, making a packet. Place on a large baking sheet and bake for 25 minutes, until the center of the chicken is 165oF. Let cool for 5 minutes and sprinkle additional balsamic on if desired.
Grill variation: Preheat grill to medium. Double up the foil for more stability. Place foil packets directly on the grill grates and cook 20-25 minutes until the center of the chicken is 165oF. Let them cool for 5 minutes before opening the packets and sprinkle additional balsamic on if desired
