Easy Tuna Patties

Ingredients
- 2 cans tuna
- ¼ cup oat flour*
- 2 tablespoons chopped parsley
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons red onion, minced
- ¼ cup scallions, chopped
- 1 ½ teaspoons Dijon mustard
- 1 egg
- ½ teaspoon pepper
- ¼ teaspoon salt
- 1 teaspoon olive oil
Directions
Drain the liquid from the cans of tuna and place in a bowl. Break the tuna up with a fork. Add in the oat flour, chopped parsley, lemon juice and zest, red onion, scallions, mustard, egg, salt and pepper. Stir until well mixed. Form the mixture into 6 patties. Place the olive oil in a skillet on medium heat. Once hot, add in the patties and let them cook for approximately 4 minutes until a golden crust forms. Flip and cook on the other side for an additional 4 minutes.
Makes 6 tuna patties

*You can make oat flour by placing rolled oats into a food processor or high speed blender and blend to a fine powder. You can also purchase oat flour at the grocery store.
