5 oz canned tuna in water (drained, ~4oz tuna)
½ fresh lemon, juiced (~1.5 Tbsp)
½ medium avocado
1 Tbsp chopped white onion
1/3 cup cherry tomatoes, chopped
1 dash salt
Pepper to taste
Cut the avocado in half. Scoop out the avocado out of 1 half.
Add lemon juice and onion to the avocado in the bowl and mash together. To the mashed avocado add tuna, salt and pepper, and stir to combine. Last stir in chopped tomatoes.
Serve with cucumber slices or whole grain crackers.
