Creamy Cauliflower and Avocado Soup
- 1 sweet onion
- 1 tsp olive oil
- 4 cups cauliflower
- 1/4 tsp thyme
- 4 cups low sodium chicken broth
- 2 avocado
- 4 TB fresh lime juice (2 limes yield)
Sauté onion in olive oil for ~5 minutes or until translucent.
Add cauliflower and thyme and cook another 5 minutes.
Add broth and bring to a boil. Simmer 20 minutes.
Let soup cool.
Add avocado, lime and blend until smooth or to desired consistency. Top with additional avocado if desired.
Makes 8 servings
