Dijon-Marmalade Glazed Salmon

Ingredients
- 1.5lbs (24oz) Atlantic Salmon, cut into 3oz portions
- 3T Orange Marmalade
- 3T Country Dijon Mustard (like Grey Poupon)
- 1/8tsp ground ginger
- Salt
- Pepper
Directions
Pre-heat broiler.
Cover baking sheet with foil and spray with oil spray.
Lay pieces of fish on foil and pat dry with paper towel to remove excess moisture.
Sprinkle each piece of fish with salt and pepper.
In small bowl, combine orange marmalade, Dijon mustard and ground ginger.
Spread glaze evenly over the pieces of salmon.
Bake in oven for 4-8 minutes, until lightly caramelized on top and fish is cooked to an internal temperature of 140 degrees.
Note: fish cooking time differs based on the thickness of the fish; the sides of the fish should be opaque and the fish will be firm to touch.
Avoid overcooking.
