Cheeseburger Meatloaf

Ingredients
- 1# (16oz) 96% lean ground beef (or 93%FF ground beef or 99%FF ground turkey)
- 1⁄4 cup old fashioned oats
- 1 large egg
- 3⁄4 cup shredded 2% cheddar cheese (~3oz)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1⁄4 tsp salt
- 1⁄4 tsp pepper
- 1⁄4 cup low sugar ketchup (such as Heinz)
- 1 Tbsp mustard
- 1 Tbsp Parmesan cheese, grated
- 1⁄2 cup bell pepper (any color), finely chopped
- 1⁄2 cup sweet onion, finely chopped
- 1⁄2 Tbsp honey (or sweetener of your choice)
Topping:
- 1⁄4 cup low sugar ketchup (such as Heinz)
- 1 Tbsp mustard
Directions
Place all the ingredients for the meatloaf in a large mixing bowl. Using your hands, (or a spatula), mix the ingredients gently until well combined being sure not to over handle it). In a small bowl mix together the ketchup and mustard for the topping.
Preheat oven to 375 degrees. Spray muffin tin with cooking spray. Place meat mixture into muffin tin and spread topping out on top of the meatloaves. Bake at 375° for 30 minutes (or until meatloaves reach an internal temperature of 165 degrees or more).
Makes 12 servings
