Pickled Shrimp

Shrimp Ingredients:
- 2 pounds (approximately) cooked shrimp, peeled, deveined, tails removed
- 2 tbsp capers
- 1 medium-sized red onion, thinly sliced
- 1 large red bell pepper, thinly sliced
- 1 tbsp celery seed
- 3 lemons, thinly sliced
Dressing Ingredients:
- 1 (0.6 ounce) envelope Italian dressing mix
- ¼ cup vegetable or olive oil
- ¼ cup cider vinegar
- ½ tbsp prepared horseradish
Directions:
Place sliced red onion in a medium-sized bowl filled with ice water. Soak for 15 minutes. This will prevent the onion flavor from over-powering the dish. Next, place shrimp ingredients in a 13 x 9 inch baking dish and mix to combine. Whisk together dressing ingredients in a medium bowl. Pour dressing over shrimp mixture and stir to coat the shrimp mixture with the dressing. Cover baking dish and chill for at least 12 hours.
