Slow Cooker Pulled Pork with Low Sugar BBQ Sauce

Ingredients
- 2.5lbs boneless pork loin trimmed of all visible fat
- olive oil spray for crock pot
- 1/2c low sugar ketchup (like Heinz)
- 2T tomato paste
- 4T Splenda
- 2T molasses (black strap)
- 1/4c apple cider vinegar
- 1/4c yellow mustard
- 1tsp red Tabasco
- 2T Worcestershire sauce
- 3/4tsp liquid smoke
Directions
Spray slow cooker with spray. Make incisions in pork roast against the grain and place in slow cooker. Wisk together all liquid ingredients and pour over roast. Turn slow cooker on low and cook for 7-8 hours or until meat shreds apart. Once cooked to desired tenderness, you can thicken sauce (if desired) by simmering on stovetop until it has reduced (or use as is). Shred meat with forks and place back in slow cooker with sauce; can be kept warm on low for 1-2 hours.
