Chocolate Banana Pudding
- 1 ripe avocado, peel and pit removed
- 3 medium ripe bananas (~7” long)
- 1/4c unsweetened cocoa powder
- 1/2tsp salt
- 1tsp vanilla extract
- 3/4c nonfat plain Greek yogurt
- 2-3 Stevia packets
- 1 cup sugar-free whipped topping (optional, for topping)
Place all ingredients (besides whipped topping) in a blender and process until smooth.
Measure 1/3 cup into 7 ramekins and refrigerate for at least 2 hours. Top with 2Tbsp whipped topping each.
