Chocolate Banana Pudding
1 ripe avocado, peel and pit removed
3 medium ripe bananas (~7” long)
1/4c unsweetened cocoa powder
1tsp vanilla extract
3/4c nonfat plain Greek yogurt
2-3 Stevia packets
1 cup sugar-free whipped topping (optional, for topping)
Place all ingredients (besides whipped topping) in a blender and process until smooth.
Measure 1/3 cup into 7 ramekins and refrigerate for at least 2 hours. Top with 2Tbsp whipped topping each.
