• 3⁄4# (12oz) 93% lean ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 1 yellow bell pepper, diced
  • 2cloves garlic, minced
  • 2-3T taco no/low sodium seasoning mix (ie. Mrs. Dash)
  • 2c low sodium chicken broth
  • 1lg zucchini or 2 small/medium zucchini, cut into small cubes
  • 1 (15oz) can no salt added diced tomatoes
  • 1 (15oz) can no salt added black beans
  • 1c medium salsa


Brown meat in large pot over medium high heat. Drain and then remove from pot and set aside. In same pot, sauté onion, bell pepper and garlic until onion is translucent.
Add meat back into pot and sprinkle with taco seasoning blend. Add remaining ingredients and simmer cover, stirring occasionally, for 15-20minutes.
