Ingredients
- 1 cup uncooked quinoa
- 2 cups strawberries, sliced
- 1 cup blueberries
- 1 mango, peeled with pit removed and diced (about 2 cups)
- 1 Tbsp agave nectar (light in color)
- 2 Tbsp lime juice
- 1 Tbsp fresh basil or mint, chopped
Directions
Rinse and prepare the quinoa according to package. Let quinoa cool to room temperature. In a large bowl, combine quinoa, sliced strawberries, blueberries, and diced mango. In a small bowl combine the agave nectar and lime juice. Drizzle over the fruit salad and toss to coat. Garnish with fresh basil or mint if desired.
Serving suggestion: Based on preference, could also increase variety of fruits by adding blackberries, kiwis, oranges, or fresh pineapple.
