Blue Cheese & Bacon Deviled Eggs

Ingredients
- 12 eggs
- 1 TB bacon crumbles
- 6 TB plain Greek yogurt
- 2/4 tsp crumbled blue cheese
- 1 tsp Dijon mustard
- ¼ tsp pepper
- 1/8 tsp kosher salt
- 2 tsp bacon crumbles
Directions
Hard boil eggs: To hard boil eggs, place eggs in a single layer on the bottom of a saucepan and cover with water (1” above eggs). Place saucepan on top of burner and turn burner on high until water just starts to boil. Pull saucepan off heat once water is boiling and cover for 12 minutes. Pour off hot water and rinse eggs under cold water to cool them and help with ease of peeling. Peel eggs.
Slice hard boiled eggs in half and scoop out yolks. Mash yolks in a bowl and add other ingredients (except 2 tsp bacon crumbles). Spoon into egg whites and top with 2 tsp bacon crumbles.
Makes 12 servings
