Carrot Ginger Sesame Salad Dressing

Ingredients

  • 1 tsp fresh orange zest
  • Juice of one large orange (about ¼ cup)
  • 1 small carrot, peeled and finely grated
  • 2 tsp freshly grated ginger – or from a tube
  • 2 scallions, minced
  • 1 Tbsp low sodium soy sauce
  • 1 tsp Truvia/stevia
  • 2 Tbsp sesame oil

Directions

Mix all ingredients together in a bowl with a whisk. Store in refrigerator in a mason jar or airtight container and shake before use.

Serving Size: 2 Tbsp
Makes 4 servings, about ½ cup of dressing
